Carob Peanut Butter Balls are a long-time family favorite recipe. This feels fitting for my first recipe post on Red’s Li’l Schoolhouse! These are the perfect bite-sized snack or a healthy dessert alternative. I hope you try them out – ENJOY!

This simple 5-ingredient recipe comes together quickly. I love having these bites in the refrigerator to satisfy my sweet tooth or help tide over a hungry child before dinner. The crunch from the Grape Nuts gives these Carob Peanut Butter Balls a nice texture.
Tip: Soften the peanut butter and honey in the microwave or on the stovetop to make them easy to mix together.
Although the title of the recipe for Carob Peanut Butter Balls implies Carob Powder will be used, I find it fairly difficult to find this ingredient. If you are unable to find it at your local grocery store, here is an option to purchase online. I typically use Cocoa Powder and they turn out great.
Carob Powder comes from the ground-up pulp of carob pods. Its high fiber and low-fat content make it a nutritious alternative to Cocoa Powder.
In a separate bowl, mix together the dry ingredients. If you purchase a box of Grape-Nuts, a large container of Dry Milk Powder, and a canister of Carob or Cocoa Powder, you will have enough ingredients on hand to make this recipe at least 3 times.
Finally, mix the wet and dry ingredients together. It will be fairly sticky at this point. You can try and roll into balls right away, but if it is too sticky, just refrigerate for 15-20 minutes and the mixture will be easier to form. I typically use a small cookie dough scoop to achieve similar-sized balls. A teaspoon works too.

The number you end up making varies greatly, depending on how much of the mixture you scoop up to make one ball. I would say the range is 2-4 dozen.
I use my hands to gently roll the mixture into a ball until it is fairly smooth. If it is not easy to do this, refrigerate for a little longer. Place each ball on a cookie sheet, or directly into a container. Make sure to separate each layer with waxed paper.
Store in the refrigerator and enjoy!
